Pat it dry with paper towels.<\/li><li>In a large Dutch oven or roasting pan, place the corned beef brisket with the fat side up.<\/li><li>Arrange the halved or quartered potatoes, quartered onion, smashed garlic cloves, bay leaf, and whole peppercorns (if using) around the brisket in the pan.<\/li><li>Pour 1 can of l\u2019Apothicaire doppelbock beer over the brisket and vegetables in the pan.<\/li><li>Cover the pan tightly with a lid or aluminum foil.<\/li><li>Transfer the covered pan to the preheated oven and roast for about 3-4 hours, or until the corned beef is tender.
